I would like to thank both the staff and the parents of the children at Saint Johns Cathedral School for entrusting in our care the dietary needs of your children. Over the last 4 years it has been our pleasure not only to provide nutritious but good tasting meals. It has been an honor working with you and your staff to provide nutritious and enjoyable breakfasts, lunches, and snacks for the students. Please continue to offer feedback to my staff and myself as to the likes, dislikes and special dietary needs of the children in your care.
As in the past all meals and snacks will meet and usually exceed the daily requirements as set by the state of Florida. A nutritionist for the Duvall County Schools helped put together the menu here at Saint Johns Cathedral School. Lunch will always include milk, meat or complete protein, two servings of fruit or vegetable, and grain. Morning snack will always include milk or 100% fruit juice as well as the afternoon snack.
Although not necessarily a Florida requirement, it is the personal requirement of Food Service Director Barbara Rodriguez, that all muffins, cakes or cookies contain “good for you items” such as whole grain flours, oatmeal, or cereals and fruit or fruit juice. Because of the high rate of peanut allergies, no foods will contain any nuts or peanut butter. And as before, no pork or fried products will be used. It is our feeling as well as goal that all meals should be enjoyable to the children as well as nutritious.
Food is transported daily in thermal containers/cambros. All meals come from the oven then directly into the thermal containers/cambros. All containers are returned for well washing in a commercial machine with echo-label products.
